Perfect cookout weather

It has been the perfect cookout weather!! It's still warm enough to be outside in shorts but there is no humidity and no sweaty heat! We've grilled the past 2 nights.

Monday night's dinner was incredible!!

Last night we had burgers, nothing big, but still good. Look who was lucky enough to score a cookout dinner. Dogs loved grilled burgers too! Ha!

New obsession

I am currently obsessed with this:

These are little natural lemon packets that you pour in your water. It's very similar to the Crystal Light packets you can buy. These are 100% natural lemon crystals and I promise you it really tastes like you added a fresh squeeze of lemon to your water. I found a box of 32 at Kroger for around $2. It was not near the Crystal Light and Kool Aid like I thought it would be. It was on the aisle where they have organic and natural food items. They can also be found here . If you like lemon water, these are amazing and perfect for work where you obviously cannot store lemons.

Pie

Last night a bunch of us had a dinner/ cookout at Matt and Jennifer's house. It was a nice night to just hang out and EAT! There were so many great things! There were hamburgers, brats, 7 layer dip, rotel dip, fruit pizzas, pasta, banana pudding, and peanut butter turtle pie. 

The peanut butter turtle pie recipe came from the Kraft summer magazine. My subscription ran out, but Jennifer still gets it, so she gave me the recipe. It was one of the easiest pies ever to make!

Ingredients:






8 oz.  Cream Cheese
1/3 cup  creamy peanut butter
1/2 cup sugar
2 cups  thawed cool whip
1/4 cup caramel ice cream topping
1 chocolate pie Crust 
1/4 cup chopped pecans
2 squares Semi-Sweet Chocolate











Directions:
Beat cream cheese, peanut butter and sugar in large bowl with mixer until well blended. Add cool whip; mix well.
Spread caramel topping onto bottom of crust; cover with cream cheese mixture. Freeze 4 hours.
Top with nuts just before serving. Melt chocolate as directed on package; drizzle over pie.

good food

Friday night, Dustin and decided to go to Bahama Breeze for dinner. It was such a nice warm evening. Plus, we had a gift card that Jennifer gave us for helping out with her dogs this past week. When we got there, we saw that Liz and Zach were also taking advantage of the gift card. We ended up sitting together and having a double date on the patio. It was a fun, relaxing night. 

Saturday, I spent quite a bit of time putting together the preschool end of the year slideshow. I always get emotional when I put the slideshows together and this year was no different. It amazes me how much those children grow and change over the course of one school year.

Saturday night, we went to the Memphis BBQ Shop where my brother works. It is seriously the best bbq. If you live in the Memphis area or you pass through, you definitely need to try it out. It doesn't have the atmosphere of Rendezvous, but the food is most definitely better.

Sunday, for Mother's day, Taylor and I took my mom to lunch. We went to The Happy Mexican. They have better salsa than any other Mexican restaurant in Memphis. We had the best time just hanging out.

So basically, my weekend was all about some good food!

Rendezvous

If you've been to Memphis or even if you haven't everyone knows we're famous for our BBQ. Tonight, we're going to the famous Rendezvous downtown with friends. I love this place and it's been a bit since I've been. I'll get lots of pics to share Monday!

Easter candy

Dear Easter, 
Please hurry up and get here. I need for you to come and go quickly! Your candy is the only kind that makes me forget all self control. 


Not to mention I have a wedding dress to fit in very soon.
